Here's quesabirria platter that I got from a random shop in San Jose today. I was a little disappointed to see that they weren't more reddish in color (and the salsa wasn't spicy at all despite my request). But I still inhaled these pretty quickly given the deliciously greasy tortillas with cheese, while the birria was decently tender too.
