Another chain from China has opened an outlet down here on the former grounds of Sumire at Bugis Junction (200 Victoria Street #01-88, 9105-0518). They serve a Yunnan-style fish that gets steamed under those bamboo hats above. Apparently it is supposed to make for a nice broth, but it was hard to detect given that I opted for one of the spicy versions that covered it up. I still ate it all, as it was pleasantly spicy and salty. But next time I'll opt for the pricier non-spicy version, and with grouper rather than that cheap Qingjiang fish, which had that muddy freshwater taste.
