The difference between maocai and malatang is a bit nebulous, with some suggesting that the former is preconfigured by the kitchen, while the latter is selected by the diner. But even that isn't very clear since a lot of maocai places still present a big spread of ingredients for you to choose from, including this newly opened outlet of a chain from China called Furong Shuxia (9 Raffles Boulevard #01-95). The watery broth here definitely couldn't beat Zhangliang or Jiaxiang, but it didn’t matter that much in the end as I was still satisfied putting this all into my belly.
