
No points awarded for guessing which city this is in (1174 North Capitol Avenue). Anyway, I came to this shop in the Berryessa Hills strip mall because a local teammate of mine mentioned that this place got some fame recently for its "cowboy pho" above.
It's actually listed on the menu as Texas Style Phở, and if you look closely at the slice of meat that I pulled out to the side, you can see why: the bark on those slices of brisket, which were not only tender but aromatically smoky. Yep, it was brilliant and fun to eat. It made me think that we're in a bit of a Pho 2.0 evolution when considering things like that awesome #15 from Pho 90 Degree too.
That said, this place also offers traditional options like marrow, egg, and fatty broth scallions, which means that I definitely want to come back to try more. And hopefully they can give me raw beansprouts next time instead of the blanched ones that I had today.
