I've been rather curious about this new counter-and-checklist stall (313 Orchard Road #B3-42) ever since I saw them across from Go Noodle House. It's a chain from Suzhou serving malaban.
What is malaban, you ask? It's a bit like malatang, but there is no soup. But it's not like mala xiangguo either, as it's not tossed in a wok. Instead, your choices of ingredients get blanched in boiling water, and then a thick brown sauce is scooped on top. So yes, it's basically something that you could do yourself at home, assuming that the sauce isn't anything special.
And special it was not, as it was in fact a bit sweet. That said, I still greedily ate the entire bowl tonight, and that's after having had a bowl of noodles earlier.
