The Traveling Hungryboy

When I first saw this place (107 North Bridge Road #01-11, 6360-3371), I was a little concerned. After all, one of the best things about Hototogisu is how creative it can be with its broth, so mazesoba seemed like an out-of-character stretch. Well, it turns out that the shop's menu says that it is "supervised by" their Michelin-starred chef, which sounded rather dubious. And that bowl above was nothing to get excited about. Granted, I liked the idea of clams as a protein, but it was only available as mazedon, not mazesoba. Nothing else about that bowl was interesting, nor do I have much desire to go back. I really hope those folks behind Ajisen don't end up diluting that Hototogisu name.
