Premaas was our lunch destination today, and I was fortunate to be able to taste a number of dishes, in particular that red kingfish curry in the upper right corner, as well as the potent pepper in the chicken next to it, all mopped up by a few light and fluffy appam. It was nice to have the taste of mutton weaved throughout the briyani, even if the grains were soft. And I only realized now that a Keralan-style "roast" is not done in an oven, but instead is pan-fried and coated in a thick spicy paste. I want to come back to try some of those set meals that they had on the menu, especially since they looked like they were very fast and affordable.
