I was never able to catch this guy when he was still in Japan. But I'm glad that I was able to stop by his NYC shop today (25 Clinton Street, 646-678-3859). That shio broth above was crisp, smoky, and savory, and I liked his skinny noodles too, especially since it reminded me a bit of Tsuta. The tomato was a great touch, and he even had a sour on tap. I was delighted.
