The Traveling Hungryboy

I'm no expert on Heng Hwa cuisine, but I've been pretty happy with the bee hoon from this chain of food stalls, having ordered it multiple times now. Everything just goes so well together, from the noodles to the shellfish and everything in between. It's delicately balanced without being polarizing in any direction, and yet is full of contrasting textures and flavors. I want to try their fried rice one day, but I can't seem to peel myself away from this dish.
