Oven Baked Snapper Loin Fregola, Chorizo and Lobster Emulsion

I finally made it out to Bar-A-Thym to dine there on-site this time. I grabbed this snapper with fregola from their lunch set, and it was so tasty that I was mopping it all up with bread afterwards. Next time I'll have to try both the more downscale quiche as welll as the more upscale omakase.
